It doesn't take up too much space that way, although I have two copies-one to use and the other is purely a backup-I even keep those backup drives in a "Faraday cage" of sorts to protect against static electricity, electro-magnetic pulses, etc. I use 1000KB/sec for the encoding quality in Handbrake. An average 1.5 to 2 hour movie tends to be about 800MB, although some people would want better quality. When I started digitizing my collection, I researched formats (at first I was prepared to go with MKV, but found it wasn't as compatible with all players) and decided on MP4, as it is compatible with AppleTV, Windows Media Center, Western Digital's WDTV player, and of course Windows Media Player. I don't use any other devices other than a Blackberry, and MP4 will play fine most of the time in that media player too. For this, I actually make a backup copy of the disc using DVDShrink, burn that ISO to a DVD-RW, then Handbrake can rip directly from the copy, as the encryption should be deleted on the copy. If you're doing TV shows (let's say you have one season of your favorite show on DVD), it can be a bit of a pain, as there are multiple titles per disc you're going to want to grab. I've done over 1000 (I lost count over the past year or so).
To go straight from a commercial DVD (like movies) where there may only be the one main title you want to grab, a lot of times you can use DVDDecrypter to rip the movie (it also decrypts it as the name suggests).
